Hello Luigi,
Thank you for the great insight. I had no idea what the #! Our old Wix site had to contain these characters in their urls, and I am unable to remove them from the old site urls.
What would you suggest to me as a fix to successful create 301 redirects from our old urls to our new urls?

Yes,
this is what I wanted to tell you just now. The hashbang is bounded in the browser, so just remove this from an URL and what remains is the URL received by the server (you should build the redirection on this).
Kind regards,
Luigi
