Yes,
you should exclude /v2 (base path) and any subfolder from sh404SEF, and leave the control to jBackend.

Actually dev.rapidassign.com/v2/ is the root of the entire joomla instance.

The problem is that if the URL:
dev.rapidassign.com/v2/get/k2/categories
Is managed by jBackend, the sub-URL:
dev.rapidassign.com/v2/get/k2/categories/8
Should be managed by jBackend as well.
In your case this doesn't happen so there should be something that conflicts with jBackend router, and sh404SEF is a good candidate.
To be sure about this, disable sh404SEF, check if it is really disabled, and check the jBackend URL again.

You must configure sh404SEF to exclude jBackend paths. I am pretty sure that this is possible, but I cannot say more because I don't know sh404SEF so much.
